Or how does RV deal with very large files? I have several VM’s on my Mac (Roughly 100-140 GB each) and I noticed that something was hogging a lot of space. When I checked, I found that RV was taking up about 240 GB of space.

Should I exclude the VM’s from being protected or is there a way to “trim” disk usage?

Are you sure it was Recovery Vault and not Guaranteed Recovery? You should definitely configure both (or at least Guaranteed Recovery) to exclude very busy or too large folders from protection to prevent unusual resources consumption.

Done. It was both. And I almost immediately suspected it when I found that the recovery data was almost the same size as the VMs. Anything I need to do to recover the extra space?

Nevermind, it did it all by itself.
